Always Moist Coffee Cake Recipe
I love a good coffee cake. I have a sweet tooth (or ten) so anything sweet is enticing. But, there’s something addicting about a sweet, buttery coffee cake that is always moist. You know, the kind that you can pop in the microwave the next day with a cup of coffee and it still tastes like it’s fresh out of the oven. If you’re looking for an easy to make, always moist coffee cake recipe, your search is over!
Here’s What You’ll Need:
Ingredients for always moist coffee cake:
- 1 box yellow cake mix
- 1/2 cup of buttermilk
- 1/3 cup coconut oil (but vegetable oil works too!)
- 1/2 cup of water
- 3 large eggs
- 3.4 ounce instant pudding mix – vanilla
- 3 tbsp cream cheese, softened
- 2 tbsp butter, melted
- 1 cup brown sugar
- 1 tbsp cinnamon
Preparation:
- Pre-heat your oven to 350 degrees.
- In a large mixing bowl, combine cake mix, buttermilk, oil, eggs, water, cream cheese, and pudding mix. Mix by hand or with hand mixer.
- In a small bowl, mix butter, cinnamon, and brown sugar. Set aside.
- Lightly grease a pan. Ideally an 8×8 or a 6-9 inch round works. Scoop half the batter into the pan and smooth to edges.
- Crumble just over half of your brown sugar mixture onto the batter.
- Layer remaining cake batter on top.
- Crumble remaining brown sugar on top.
- Bake the coffee cake for 30 minutes or until lightly browned.
- Serve warm and enjoy!
Brown Sugar Mixture
WHile you can certainly use brown sugar alone for your coffee cake, I’ve found the addition of cinnamon and butter gives it that extra flavor. The hint of cinnamon reminds me of stepping into a bakery with all its delicious smells. And cinnamon just make everything better! ( Have you tried the cinnamon mug cakes yet?)
The butter is my favorite addition the the sugar mixture. I love the slightly caramelized taste it adds. To tell you the truth, I often slip a little extra butter into the recipe if I want some added gooeyness! I always use salted butter too. Give it a try if you’re a butter lover like me.
