Italian Sausage and Pasta Soup
While it’s scorching hot here in Texas, I just can’t seem to get my mind off of soup. Here’s a simple yet oh-so-savory Italian soup you can make in your instant pot or stove top.
Here’s What You’ll Need:
- 1/2 lbs ground Italian sausage
- 2 cups of pasta – I use campanelle for its unique look
- 1-2 cloves of garlic, minced
- 1 tsp salt
- 1 tsp pepper
- 1 tsp Italian seasoning mix
- 1 tsp oregano
- 1/4 cup copped onions
- 3 cups fresh spinach
- 1 cup water
- 6 cups chicken broth
- 1 cup shredded mozzarella cheese or cheese slices
- 2 tbsps butter, softened
- 2 tbsps flour
- 1 tbsp vegetable oil
Preparation for instant pot (adjust accordingly for stove top):
- Turn instant pot to saute and add oil
- Brown Italian sausage, adding in garlic, salt, pepper, oregano, and Italian seasoning
- Add in onions, water, broth, and pasta and switch pot to pressure cook on high for 6 minutes. Quick release when timer is complete
- Carefully remove lid and ad in spinach
- Set to warm while you mix together your flour and butter paste
- Add paste to soup to slightly thicken, creating a bit of a cloudy look while stirring
- Set oven to 400 degrees
- Pour soup into a large oven-safe bowl or smaller individual ones. Top with cheese and back for 5-6 minutes
- Remove and let cool for several minutes before serving
Stove Top Soup
Stove top options are just as simple, but somehow, my instant pot just makes my life easier. I feel I can multitask a bit more. But you can certain adapt the recipe to easily accommodate stove top soup. Boil your pasta as you saute your sausage, then add all ingredients to a large pot to simmer. Add in your paste, stir, and then proceed to oven instructions. It’s that simple, with a couple extra pots or pans to clean!
