Blueberry Banana Bread Muffins
It seems our household is on a blueberry kick this month! We’re tossing them into everything we make after the last blueberry pancake pastry pan was devoured. As long as they kids are enjoying them, they don’t really need to know just how healthy these little guys are, right? So, if you’re looking for a tasty breakfast, snack, or dessert, this fruity favorite is easy to make and just as delicious!
Here’s What You’ll Need:
- 2 cups flour
- 3 bananas
- 1 cup blueberries
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup softened butter
- 2 eggs
- 2 tsp vanilla extract
- walnuts or pecans if desired
Preparation:
- Pre-heat oven to 375 degrees and spray or line a cupcake pan ten set aside.
- In a larger bowl or mixer, combine dry ingredients
- In a medium bowl, combine butter, eggs, and vanilla extract, then add to mixing bowl and blend on medium speed until smooth
- Gently fold in blueberries
- Scoop a generous amount of batter into each cupcake holder
- Bake for 13-15 minutes
- Top with a sprinkle of cinnamon sugar if desired

Recipe Variations
If you like your muffins a bit on the sweet side, bump up your 1/4 cup brown sugar to a 1/2 cup. You can also mix in a couple teaspoons of cinnamon to the batter for a little extra flavor. We usually like to top our blueberry banana bread muffins with a cinnamon sugar sprinkling before tossing it in the oven too. This recipe is also delicious with strawberries instead of the blueberries!
