Marinated Korean Beef and Veggie Sandwich
Recently, I’ve been playing around with various Asian cuisine in an attempt to replicate the mouthwatering flavors in some of our favorite dishes. Honestly, I don’t know how my mom use to do it and I’m a bit bummed she was a cook by memory kind of chef. There are definitely days I wish I had a childhood recipe to follow, but I admit, playing around in the kitchen is fun too. And that’s exactly what I’ve been doing in an effort to make a marinated Korean beef and veggie sandwich that gets me drooling at the thought of it! The blend of various flavors will have you craving this delicious sandwich.
Here’s What You’ll Need:
Ingredients for Marinated Korean Beef and Veggie Sandwich:
1 lb shaved beef
1 avocado
1 cucumber, sliced
1 large carrot, grated
4 tbsp apple cider vinegar
1 tbsp sugar
cilantro
2 oven bake bread baguettes or a large store-bought french bread, bread rolls, or any fresh-baked bread from your grocery store bakery will do
1 jar Korean BBQ Marinade
1 bottle Sriracha Mayo
Preparation:
Marinate your shaved beef and a jar of Korean BBQ Marinade overnight for the best flavor. If you’re short on time, you can certainly mix it together beforehand, but I highly recommend letting it marinate as long as possible.
Slice your cucumbers and shred your carrot. Mix apple cider vinegar and sugar in a bowl and let your veggies marinate overnight.
If you’re baking your bread, prep your oven and follow baking instructions while you cook your beef.
In a large skillet, cook your shaved marinated beef on low, stirring occasionally.
When your bread is done and cooled, slice open and line with chilled and marinated cucumbers and carrots, then slice up your avocado and line the bread roll.
Top the veggies with your marinated beef and drizzle sriracha mayo. Sprinkle cilantro over your sandwich and prepare to drool!
Meat Alternatives
While I am a huge fan of this sandwich with the marinated beef, you can certainly substitute it for various options. We’ve also tried this recipe several times with chicken. I recommend dicing your chicken before leaving it in the Korean BBQ Marinade so it really soaks in each little bite. If you’re more of a whole chicken breast sandwich lover, go for it! It’s all about preference!
I have also created this delicious marinated veggie sandwich using baby shrimp. Think of it as an Asian cuisine twist on the Louisiana Po Boy sandwich. It’s very tasty and a great alternative if you’re looking to try the same amazing crisp veggie flavors with a different protein.
