Garlic Shrimp & Veggie Pasta

If you’re in the mood for some garlicy goodness, you’ll love this tasty shrimp and veggie pasta recipe. It’s full of flavor without the heavy cream base. Toss in your favorite sautéed vegetables, and you’ve got a delicious, easy to make shrimp pasta dinner for the family!

Here’s What You’ll Need:

Shrimp & Veggie Pasta Ingredients:

  • 1/2 lbs medium shrimp
  • 2 tbsp garlic, minced
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 2 cups broccoli
  • 1 1/2 cups zucchini
  • 1 cup tomatoes, diced
  • 1 box of your favorite pasta
  • onion powder, salt and pepper to taste

Preparation:

  • Bring water to a boil and cook your pasta.
  • In a large pan, heat olive oil and garlic, on medium heat, sautéing for 2-3 minutes.
  • Add in zucchini and broccoli and sauté for 3 minutes.
  • Add in shrimp and cook for 2-3 minutes. Season with a bit of salt, pepper, and onion powder.
  • Add in diced tomatoes and continue to sauté medley for another 2-3 minutes, being careful not to overcook your shrimp.
  • Turn heat to low and add butter.
  • When your pasta is finished, drain and add to your shrimp veggie pan. Blend well to coat pasta with the olive oil, butter, and natural vegetable juices.
  • Season pasta to taste and serve.

Garlic Shrimp & Veggie Pasta Sides

Is a pasta dish ever complete without a side of warm, buttery bread? With garlic and butter already out, why not whip up a toasty cheese bread for your meal? I like to throw together a garlic butter spread with a dash of Italian seasoning mixed in. I pop 3 tablespoons of butter in the microwave and soften slightly, then add in a tablespoon of minced garlic. Add in a few dashes of seasonings, then spread it onto a french bread loaf cut in half. Top the bread with a handful of your favorite shredded cheese and pop it in the oven on broil for 2 minutes. It’s the perfect side for your garlic shrimp & veggie pasta dish!
