Baked Garlic Chicken Thighs & Veggies
In an effort to eat healthier, I’ve been adding a lot more vegetables to our meals lately. It’s not too surprising they don’t get as many cheers as I’d hoped. Bt it’s an effort and a process, right? With this tasty garlic baked chicken thigh recipe, I loaded up on the veggie seasoning for extra flavor and MY taste buds were happy. So, if you’re looking for a delicious, healthier, no-fuss meal, this baked chicken recipe is just what you need this week!
Here’s What You’ll Need:
Ingredients:
- 1lb chicken thighs
- russet or new potatoes, cut
- 2 cups celery, thickly sliced
- 2 cups baby carrots
- 4 tbsp olive or vegetable oil
- 1/2 teaspoon pepper
- 3/4 teaspoon salt
- 1 tbsp chopped garlic
Preparation:
- pre-heat oven to 450
- brush veggies with a portion of the olive oil and season
- drizzle oil on baking sheet then line with vegetables
- brush thighs with olive oil and season
- place thighs on top of vegetables
- cook for 18-22 minutes, depending on thickness of your thighs
- remove and serve, using natural juices and a sprinkle of parmesan cheese to top it off
Meal Sides
This tender baked garlic chicken and vegetable recipe pairs perfectly with any of your favorite sides. While the potatoes can be quite filling, I prefer to stick with a small side salad. The kids love to have a small side of bow tie pasta drizzled with a touch of olive oil and sprinkled with salt and parmesan. A small dish of pasta just goes great with anything! It’s also a great time to throw together a side of summer fruits. ANy leftovers are always a nice snack in the summer heat. If the kiddos are a bit picky, give them a touch of cool whip to dip their fruit in!
