Baked Potato Dippers

Over the summer, my daughter and I had a bit of an obsession with baked potatoes. We played around with various toppings so we never got bored eating the same baked potato. We decided to try our hand with the traditional potato wedge appetizer you see at many restaurants. I have to say, they are pretty delicious and don’t last very long at our house! The gooey cheese and loads of bacon are a favorite for this baked potato dipper recipe.

Here’s What You’ll Need:

Baked Potato Dipper Ingredients:

  • 4 large potatoes
  • 2 tbsps vegetable oil
  • 2 cups shredded cheddar cheese
  • 1 tsp garlic, minced
  • 5-7 strips of bacon
  • salt and pepper to taste
  • sour cream or ranch for dipping
  • 1/4 green onions, chopped

Preparation:

  • Pre-heat your oven to 375 degrees
  • Wash potatoes, then cut them into 1 inch slices
  • Generously brush vegetable oil onto potatoes, front and back
  • Season both sides with salt, pepper, and minced garlic
  • Pop in the oven for 30 minutes
  • Cook bacon to desired crispiness, then cut or crumble into small pieces
  • Remove your potatoes from the oven after 30 minutes, flip over, and top with cheese and bacon
  • Return to the oven for an additional 5-8 minutes
  • Remove from oven and serve with sour cream or ranch

Baked Potato Dipper Variations

I love to add jalapeno rings to my potato dippers, while my daughter prefers to pas on the spicy addition. These dippers also make a great little appetizer. If you have a variety of taste buds to please, top your potato slices with cheddar cheese only, then create a buffet bar of toppings for your guests. Our favorites are:

  • Bacon
  • Jalapeños
  • Green onions
  • Pico de gallo
  • Sour cream
  • Guacamole
  • Chopped red onions
  • Meat and bean chili
