Stuffed Avocado Scramble
Yes, it tastes just as good as it sounds! Baked avocado scrambles make a delicious breakfast or snack and ready in minutes. The toppings, like any scramble, are endless, so get creative and try all your favorites!
Here’s What You’ll Need:
- 1 avocado, cut in half
- 2 eggs
- 1 slice of bacon
- 2 tbsps shredded cheese
- salt and pepper to taste
Preparation:
- Pre-heat oven to 400 degrees
- Cut your avocado in half and remove pit. Spoon out a small amount of avocado to make the center a bit larger and deeper
- Scramble your eggs and season to taste
- Crisp and crumble your bacon
- Add eggs, bacon, and cheese to the center of your avocado
- Bake for 5 minutes

It doesn’t get much easier than that! It’s a tasty breakfast option and allows you to be creative. Toss in some sausage, diced tomatoes, jalapeños, or black olives. I’ve even tried a taco-style avocado with ground beef, tomatoes, black olives and sour cream. If you’re a cheese lover, like I am, try a blend of cheeses on your eggs. I love cheddar, colby jack, and feta, with diced tomatoes on top.
