Loaded Potato Soup
This time of year can be crazy busy with activities. If you’re like us, you may fall into the trap of drive-thru dining just for the convenience of it all. I feel so much better, though, when I can prepare a home-cooked meal for my boys, and this loaded potato soup recipe is indeed one of the easiest fixes on busy days.
Y’all this is literally a dump-stir-go recipe! It is one of my quick throw togethers my boys enjoy that actually fills them up for a couple hours!! Partner it with a grilled ham and cheese sandwich, and it will hit the spot on some of these cooler fall days.

INGREDIENTS
1 can condensed cream of chicken soup
1 can condensed cream of celery soup
32 oz. chicken broth
20 oz. package of shredded potatoes
1 cup (give or take) of shredded sharp cheddar
1 cup (give or take again) of real bacon bits
1 cup (you guessed it, give or take) of sour cream
4 chicken bouillon cubes or enough salt to taste
*I occasionally add a cup or two of instant potato buds to thicken the mixture, too. That also amps the potato flavor focus.
DIRECTIONS
*Dump the ingredients into a lined (or not lined, your preference) crockpot *Stir
*Cook on low for the day *Serve and enjoy
