NanaHood’s Favorite Chicken/Noodle Casserole
My favorite chicken noodle casserole
More often than not when I cook, I cook for a lot of people. Casseroles are a great way to cook a meal (or most of a meal) in one dish. I love recipes that are quick, easy and good. Recently I found one that with a few added ingredients, has turned out to be one of my favorites.
First I will show you the original recipe and then I’ll show you what I changed.
4 skinless, boneless chicken breast halves
6 ounces egg noodles
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 cup sour cream
salt to taste
ground black pepper to taste
1 cup crumbled buttery round crackers
1/2 cup butter
Poach chicken in a large pot of simmering water. Cook until no longer pink in center, about 12 minutes. Remove from pot and set aside. Bring chicken cooking water to a boil and cook pasta in it. Drain. Cut chicken into small pieces, and mix with noodles.
Directions
In a separate bowl, mix together mushroom soup, chicken soup, and sour cream. Season with salt and pepper. Gently stir together cream soup mixture with the chicken mixture. Place in a 2 quart baking dish.
Melt butter in a small saucepan, and remove from heat. Stir in crumbled crackers. Top casserole with the buttery crackers.
Bake at 350 degrees F (175 degrees C) for about 30 minutes, until heated through and browned on top.
What I did differently
I wanted to feed several people (including 6 foot 8 twin boys who eat enough for 4 people) so I needed to increase the recipe. Instead of using part of a bag of egg noodles I used the whole bag. I followed the recipe but it wasn’t creamy enough because I had added noodles so I added a cup of mayonnaise to the rest of the ingredients. I also chopped up an onion and sautéed it in some butter and added it. (The next time I made it I didn’t sauté them and I didn’t like it as well).
We are a cheese loving family and I added a cup of shredded cheddar cheese (not sharp). With the cheese, the onion, and the mayonnaise, this is one casserole that is guaranteed to get eaten at my house!
This casserole has actually appeared on NanaHood before, but not with the changes I mentioned. It’s much better this way!
