My Grandmother’s Soup
I don’t remember my Grandmother Bell. She died when I was about eighteen months old. I’ve seen pictures of her and heard stories all my life, but I had never heard about this soup until my Aunt Mary Alice sent me this recipe. It sounds like a winner to me! Thanks for sharing Aunt Mary Alice.
From Aunt Mary Alice: As a child, I was totally convinced that this soup made me feel better when I was sick with cold or tonsillitis!! Now, I just love it for its taste.
Mother’s Potato/Tomato/Onion Soup (Martha Hill Bell)
3-4 potatoes, cubed (about ½” square, or a little bigger)
1 medium onion, chopped
Cook till almost tender in as little water as possible.
Add a little salt the last few minutes as it cooks.
3 cups tomato juice. (best if it’s home-canned, with the
extra watery part on top poured off)
½ tsp salt
1 tsp sugar
Add to the potato mixture, bring to a boil, simmer
About 5 minutes.
In another saucepan, combine
3 c milk (or 1 ½ c skim milk and 1 ½ c half & half)…Cold!
Pour hot mixture slowly into cold milk, stirring constantly.
Heat for a few minutes, but DO NOT BOIL….
Taste for salt…serve with generous sprinkling of black pepper.
If you reheat, microwave is best. If you ever let it boil, it
will curdle.
