Pumpkin Spice Cream Cheese Muffins
For many of us, pumpkin spice ANYTHING screams fall. As the temperature drops and the outdoors begin to fill with more color, it’s time to whip out those pumpkin recipes. One easy to make breakfast, snack, and dessert recipe I love is for a flavorful pumpkin spice muffin. Depending on your sweet tooth, you can top them and fill them with a whipped cream cheese frosting for added favor. Whichever way you choose to eat yours, this batch will make plenty to experiment with.
Here’s What You’ll Need:
Ingredients:
- 1 box of spice cake mix (any flavor will work if spice is unavailable)
- 1 1/3 cups of canned pumpkin puree
- Whipped cream cheese frosting
- A small mixture of cinnamon and sugar
Instructions:
- Preheat your oven according to cake mix directions. Spray or line your cupcake pan and set aside.
- In your mixer or with a hand mixer, blend together your cake ingredients until smooth
- Add in pumpkin and mx until smooth
- Spoon mixture into pan, 1/2-3/4 ‘s full
- Bake for 18-22 minutes
- Allow to cool before topping with frosting
- If filling with cream cheese frosting, allow to cool a few extra minutes then fill the center of each muffin with your piping kit
- Sprinkle your frosting with the cinnamon sugar mixture
Delicious Any Way You Serve Them
I love these quick and easy muffins in the morning with a fresh cup of coffee. They are truly that easy to make. I start a batch and enjoy them with a tad of butter while they are still a bit warm. I use the remaining batch to fill or top with the cream cheese for the kids to enjoy after school.
