Sweet & Sour Chicken Recipe
This week we decided it’d be a great idea to re-introduce a recipe from Nanahood that has been loved by many for years! Teresa made the dish from a friend’s recipe and shared it here back in 2018. While I made a few minor tweaks in my version, you can find the original Easy Sweet and Sour Dish recipe here.
Simple Recipe Variations
In my version of this delicious sweet and sour recipe, I substituted zucchini and carrots for the bell peppers. We also love a slightly thicker coating on our chicken, so you’ll noticed I used a bit more flour than the original recipe calls for. And lastly, we are HUGE dark meat fans in this household, so I substituted thighs for chicken breast.
Here’s What You’ll Need:
Ingredients:
- 1 cup flour
- 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1 tsp pepper
- 1 zucchini, cut into chunks
- 1/4 cup red onion, cut into chunks
- 1 cup celery, thickly sliced
- 1/2 cup ketchup
- 1/2 cup lemon juice
- 1/2 cup crushed pineapple with juice
- 1/3 cup packed brown sugar
- 1 pound skinless, boneless chicken breast thighs, cubed
- 3 tablespoons vegetable oil, divided
Preparation:
- Combine the flour, garlic powder, salt, and black pepper in a bowl.
- Roll and coat the chicken in flour mixture.
- Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat.
- Cook and stir the chicken for several minutes on each side, until no longer pink in the center and the juices run clear – approximately 8 to 10 minutes total. Remove from pan and set aside.
- Heat 1 tablespoon vegetable oil in the same skillet, over medium heat.
- Cook and stir your veggies until slightly tender.
- Return the chicken to the skillet.
- Whisk ketchup, lemon juice, pineapple, and brown sugar in a bowl, then pour into the skillet and bring to a slight boil.
- Cook and stir the chicken, vegetables, and sauce until heated through – approximately 2 to 3 minutes.
- Serve on a bed of steamed rice and enjoy!
