Delicious Italian Sausage Tortellini to Spice Up Meal Time

Italian Sausage Tortellini

We all have our favorite go-to dishes, whether it’s cooking at home or ordering at a restaurant. And if you have kiddos and grand kiddos, you know what I mean when I say the same meal can get a little boring after a while. While one of my son’s favorite is the creamy veggie pasta, I was in the mood for a similar pasta version with a twist. By adding a little Italian sausage and going with a lighter sauce, the sausage tortellini medley turned out to be a flavorful dish!

Here’s What You’ll Need:

Ingredients:

  • 1 bag frozen cheese tortellini
  • 1 can Rotel tomatoes and green chile
  • 1/2 cup mushrooms, sliced
  • 1/2 lb ground Italian sausage
  • 1/2 cup heavy cream (or pre-made alfredo works too)
  • 4 tbsp olive oil
  • salt and pepper to taste
  • 1 tbsp minced garlic
  • parmesan cheese to garnish

Preparation:

  • saute garlic and mushrooms in 1 tbsp of olive oil then set aside
  • brown Italian sausage on medium, then add mushrooms and garlic
  • add heavy cream and seasoning, mixing slowly on low heat
  • add tortellini to boiling water
  • add tomatoes and chile to sausage medley and stir while simmering
  • when tortellini are finished, add to sausage and sauce, adding in remaining olive oil
  • add additional seasoning if desired
  • serve and garnish with parmesan cheese

Sauce Variations

Depending on how heavy you want your sauce, adjust the amount of heavy cream or alfredo you add to your mixture. You could also skip the cream base all together and keep your dish light with an olive oil base. Another favorite is using spaghetti sauce in place of the cream if you prefer red to white sauce options. And don’t forget to sprinkle in a few red pepper flakes if you love your pasta dishes with additional heat!
