How to Can Tomatoes

Remember the song by George Gershwin Let’s Call the Whole Thing Off ?

The song was in the movie Shall We Dance? with Fred Astaire and Ginger Rogers. The movie came out in 1937 so there’s a good chance you don’t remember it, but I love old black and white movies.
We planted tomatoes in our greenhouse this year and no matter how you pronounce it….we have a ton of them!
My grandmother canned tomatoes but my mother didn’t. I have never canned them either but my husband decided that he was going to give it a try. Other than making a mess (which he cleaned up-thank you hubs) he did a great job!
Sort of looks like The Chainsaw Massacre movie was filmed in my house, doesn’t it? But look at his finished product!
How to can tomatoes:
– Get a large pot or canning kettle full of water and bring to a boil.
– While you are waiting on water to come to a boil (This will take awhile…watched pots don’t boil).
– Get a large bowl of ice water and place it near your pot.
– When the water finally boils then put your tomatoes in. Cook them for about a minute, and then lift them out with a slotted spoon, and put them into the ice water to cool fast.
– When the tomatoes have cooled off enough, use a sharp knife to remove the tomato skins (they really almost peel off with your hands…they just slide off!).
– Boil your water again and put the jars in a canning rack, and boil the empty jars for 10 minutes to sterilize them.
– Put the lids in individually for 10 minutes to make the sealant soft.
– Take the jars out of the water but keep it boiling.
– Boil a tea kettle full of water.
– While the water is boiling you can put 2 tablespoons bottled lemon juice in each jar and fill the jars with the tomatoes. Cover the tomatoes with boiling water from the tea kettle if you need to but leave 1/2 inch of space at the top of the jars.
– Clean the edges of the jars (this is a messy process…wear old clothes) and put the lids and rims on the jars. Then set your jars in the canning rack and lower them into the boiling water (be careful!) in the canning pot. Boil for 45 minutes.
– Remove cans from the water and set them on your counter to cool. Put jars in a cool, dark place until ready to use in your spaghetti, chili, soups or whatever!

Ooooh Teresa, I remember this very well, I used to cann all the good stuff. I actually started making only Salsa when canning tomatoes, I could use it in everything. Lots of years saving lots of money and better tasting!
