Chicken Veggie Feta Dish
Normally I’m a feta-on-salad- kind of gal, but I’d been hearing friends talk about how delicious it is when it’s baked. I couldn’t quite envision it, so of course I had to do my own experiment! Afterall, I love anything with cheese, so regardless of the outcome, it was sure to get eaten. With a little imagination, I threw together a creamy medley of chicken, mushrooms, zucchini, and tomatoes that made me realize what I had been missing all along!
Here’s What You’ll Need:
Ingredients for Chicken Veggie Feta Dish:
- 1/3 cup Extra Virgin Olive Oil
- 8 oz feta cheese block
- 10 oz cherry tomatoes
- 10 oz penne pasta
- 2 tbsp garlic, minced
- salt and pepper to taste
- 1/2 tbsp Italian seasoning
Preparation:
- Pre-heat your oven to 400 degrees.
- Place tomatoes and feta cheese in a medium baking dish and drizzle oil over them.
- Add a bit of seasoning then place in the oven.
- Bake for 20 minutes.
- Cook your pasta , drain, and set aside.
- Cut chicken thigh or breast into small cubed pieces and cook over medium heat.
- Add in your garlic, mushrooms, and zucchini and saute continue to saute over medium heat. I like thicker zucchini, so I start with them a few minutes prior to adding mushrooms.
- Remove feta from oven and carefully mix and blend together with the tomatoes. Your cheese will separate easily for you.
- Slowly add in your pasta, adding salt and pepper as you blend.
- Add in your veggies and blend together.

I have to say, the chicken and veggie feta pasta was a bigger success than I imagined. To my surprise, my son even had a second helping! The tender chicken thighs were an ideal choice and the cherry tomatoes and feta mixture added so much flavor to the dish. I could even be tempted to bake up a little tomato feta bowl as an appetizer!
