Cinnamon Toast Sugar Cookie Recipe

With the kids home for the summer, it can be easy for them to get bored at any age. I’ve found that baking with them has always been a fun activity at any age and stage, no matter how messy it gets or how bad it may turn out! So, when we decided to take a stab at Cinnamon Toast Sugar Cookies, we had fun AND were super happy with the delicious recipe outcome!

Cinnamon Toast Crunch Lovers

I should mention, we’re big Cinnamon Toast Crunch cereal fans in this house. It’s one of those cereals that make a perfect snack as well as breakfast! So, when we kept seeing photos of a Cinnamon Toast Crunch Cookie mix, we were hooked. But it was ALWAYS sold out! Well, this week we gave up and decided to try making our own. And they were amazing!

INGREDIENTS FOR CINNAMON TOAST SUGAR COOKIES:

INGREDIENTS:

  • 2 1/2 cups flour
  • 1 cup butter, softened
  • 2/3 cup sugar
  • 3/4 cup brown sugar
  • 3 tsp vanilla extract
  • 2 large eggs
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • 2 tbsp sugar
  • 1 tbsp cinnamon
  • 1 cup Cinnamon Toast Crunch cereal

PREPARATION:

  • Pre-heat oven to 350 degrees
  • In a large mixing bowl, mix sugars, cinnamon, butter, vanilla, slat, and eggs.
  • Add in corn starch, baking soda, baking powder, and flour. Mix well.
  • In a small bowl, smash cereal down into tiny bits, then mix in your cereal until blended well.
  • Scoop 1-1.5 tbs of dough and drop onto baking sheet.
  • Bake for 10-12 minutes.

Cinnamon Toast Cookie Toppers

While I don’t think we couldn’t handled more sugar, the original cookie mix does show images of optional frosting on the cookies. They sure would be cute for parties or playdates! I envision adding a few cereal squares to the top of the frosting as toppers. But you’ll have to try out the recipe and judge for yourself. For us, these yummy cookies already had plenty of sugar in them already!
