Oreo Sugar Cookie Sandwiches

With remote learning in full swing, I figured a sweet treat was in order to help lift some spirits in our home. Instead of our usual sugar cookie go-to, I added a little something to make it more fun. Since Oreos are a huge hit here, I got started crushing those cookies to add into my batter for an after-school surprise.

HERE’S WHAT YOU’LL NEED:

INGREDIENTS:

  • 2 3/4 cups of all-purpose flour
  • 1 cup butter, softened
  • 1 1/4 cup  granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 small tub of frosting
  • 1 cup of crushed Oreos
  • 1-3 drops of your favorite gel food coloring

PREPARATION:

  1. Preheat oven to 350°F and line your cookie sheet with parchment paper
  2. Combine flour, baking soda, baking powder and salt in one bowl
  3. Mix the butter and sugar together in your mixer on medium
  4. Slowly add in your bowl of dry ingredients to the mixer
  5. Add in your egg and vanilla extract and continue mixing
  6. Add in Oreos and blend well
  7. Roll balls (approximately 1 tablespoon for small sandwiches) and place 2 inches apart on your cookie sheet
  8. Bake for 8 minutes
  9. Mix frosting nad food coloring
  10. Remove cookies when done and cool completely
  11. Layer frosting onto the bottoms of half your cookies and carefully top with the remaining cookies
  12. Refrigerate approximately 15 minutes

Messy Sweets and Alternatives

I’m not going to lie – these can be messy! But that’s half the fun, right? Another alternative is to set out a few ramekins of different colored frosting and various sprinkles so the kids can dip their Oreo sugar cookies instead. Either way, they’ll love them!
