Tender Skirt Steak Saute

The next best thing to grilling a delicious skirt steak in the yard on bbq grill is a set-it-and-forget-it instant pot recipe that will leave your steak juicy, tender, and flavorful. When rain in Texas spoils your cookout plans, it’s the next best thing! Plus, it gives you the extra time to prepare your veggies and sides without having to man the grill. And I’m all for multitasking the easy way!

Here’s What You’ll Need:

Ingredients:

  • 1.5lbs skirt or flank steak
  • 1 Tbsp garlic, minced
  • 2 cups mushrooms, sliced
  • 1-2 cups red onion, sliced
  • 2 Tbsp salt
  • 1 Tbsp pepper
  • 1 Tbsp onion powder
  • 2 Tbsp cumin
  • 1 Tbsp chili powder
  • 1 cup water

Preparation:

  • Mix seasonings in a small bowl and sprinkle generously onto your steak
  • Pour water into your instant pot, then place your steak into the provided basket or rack, depending on your model
  • Turn valve to seal, and pressure cook on high for 10 minutes and naturally release for 10 minutes
  • Saute your onions and mushrooms
  • Remove and let rest, then chop, slice, shred, or cut into large portions

Left Overs Anyone?

This steak stays tender and juicy; perfect for steak sandwiches the next day! I love using a french bread baguette, toasted or not, and layering on the steak, mushrooms, onions, and a ton of mozzarella cheese. Pop the loaf in the oven on broil for 2-3 minutes to get that gooey cheese layer. Remove and slice up into grab-and-go sizes for an easy leftover meal. It also makes a great breakfast burrito if you can’t wait until lunchtime!
