Creamy Tomato Tortellini Soup

While we are still near triple digit temps in my area, my stomach is screaming for fall soup recipes! I love whipping up new soup recipes on drizzly days. There’s just something about the dark clouds, cool wind, and piping hot broth that makes it more enjoyable. So, in honor of the looming clouds, light sprinkles, and (uncomfortably hot) wind, I decided it was a creamy tomato tortellini soup kind of day.

Here’s What You’ll Need:

Ingredients:

  • 1 lb frozen tri-colored cheese tortellini
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped spinach
  • 1/2 cup sliced mushrooms
  • 2 vegetable broth
  • 1 cup marinara
  • 1/2 cup heavy whipping cream
  • salt, pepper, onion powder to taste
  • 1 tbsp minced garlic
  • 1 tbsp oil

Preparation:

  • In a medium saucepan, saute garlic and mushrooms in oil.
  • Boil water and cook tortellini for 6-7 minutes, or until they float to the surface. Drain and Set aside.
  • Add tomatoes to saucepan and saute on medium heat for 2 minutes.
  • Sprinkle in you spinach.
  • Stir in marinara and heavy cream, blending together over low heat. Season to taste.
  • Pour vegetable broth into a medium pot and heat over medium heat. Stir in creamy tomato blend and add tortellini.
  • Allow to simmer for a few minutes before serving.

Customizing Your Tortellini Soup Recipe

Soups are so easy to customize, especially if you have picky eaters in the house. If your family loves chicken, you’ll love this creamy tomato tortellini soup with chunks of shredded chicken. For busy nights, I prefer using a rotisserie chicken, allowing plenty of leftovers for a chicken meal the following night.

Do you like to spice up your soup a bit? This tortellini recipe is also delicious with ground Italian sausage and a pinch of red pepper flakes. I saute my Italian sausage prior to my mushrooms, then follow the same steps to complete the soup. It adds a nice kick when you’re craving a little spice.
