Veggie Tortellini Soup

As the fall breeze kicked back up again this week, my veggie tortellini soup recipe was calling my name. I fill it with a ton of my favorite vegetables and switch it up a bit when my taste buds crave a little something different. It’s an incredibly easy recipe to throw together, so grabbing whatever veggies are in your fridge will do just fine too.

Veggie Tortellini Soup and pita crackers

Here’s What You’ll Need:

Ingredients:

  • 6-8 cups of vegetable broth
  • 1 cup tomato sauce
  • 2 tsp olive oil
  • 1 squash, sliced and cut into fours
  • 1 zucchini, sliced and cut into fours
  • 1 cup celery, sliced
  • 1 cup cabbage, chopped
  • 1 tbsp garlic, minced
  • 8-10 oz tortellini
  • 1 tsp oregano
  • salt and pepper to taste

Preparation:

  • Boil water and cook tortellini according to directions, then drain and set aside
  • Heat oil and garlic on medium-low then sauté squash and zucchini for 3 minutes
  • Add in celery and cabbage and sauté an additional 3-4 minutes, seasoning to taste
  • Add vegetable broth and tomato sauce to your tortellini and stir over medium heat for several minutes
  • Add veggies into soup base and season to taste

Eating Healthy

Let’s Be Honest – we haven’t all spent our 2020 taking as much care of ourselves as we should, whether it’s physically or mentally. The state of the world has taken a toll and I for one have spent too much time either on the couch or baking sweets! Sometimes I need a little reminder what a difference a simple healthy dish can make.

It felt good enjoying a hot bowl of soup with veggies that were filling me with vitamins and nutrients. Sometimes it takes that sluggish feeling to remind me I’m in need of a health boost. And, while it looks light and refreshing, it’s actually quite filling. I enjoy a bowl for lunch and leftovers make a great side dish with dinner. And while the kiddos aren’t always the biggest veggie eaters, they get a bit of the good stuff while trying to fish out the tortellini if I dice up some smaller vegetable pieces.
