Sheet Pan Poached Egg Breakfast Sandwiches
I threw together a quick and easy sheet pan poached egg and bacon breakfast sandwich this weekend. It’s one of my favorite go-to recipes when I have hungry mouths to feed but a bit pressed for time. What didn’t occur to me was how this tasty, time-saving breakfast may be just what others were looking for. It wasn’t until a friend dropped by that morning and wanted to scribble down the steps after I whipped up another batch that I realized this may be a recipe worth sharing! So, for all of you breakfast sandwich lovers who would rather make it at home than run through the drive thru, this one’s for you!
Here’s What You’ll Need:
Ingredients for Sheet Pan Poached Egg Breakfast Sandwiches:
- 6 + eggs (depending on how many you’re feeding)
- 1 can oven bake biscuits
- 6 + strips of bacon
- 2 tbsp milk
- salt and pepper to taste
- 12 tbsp water
- butter or butter spray
Preparation:
- Preheat oven to 350 degrees
- in a cupcake tin, grease all cups then fill each with 1 tbsp water
- add 1 egg per cup and top with salt and pepper
- line your pan with parchment paper for quick cleanup
- add biscuit dough and bacon strips
- bake for approximately 12 minutes, then remove biscuits
- return to oven and cook another 2-5 minutes until bacon and eggs are to your liking
- remove from oven and build your sandwich!
Perfectly Poached Eggs
The secret to perfectly poached eggs in the cupcake tin is the water and timing. By adding a tablespoon of water to each tin, you prevent empty tins from scorching and keep the eggs from sticking to the sides and bottom of the cupcake tin.
Most ovens will bake perfectly poached eggs between 12-16 minutes. Depending on the consistency you want your yolk, remove accordingly. Mine were removed right at 16 minutes, however, my oven is quite temperamental, so I still tend to check on my eggs around the 14 minute mark. I love a running poached egg, but this batch was for the kiddos, so a bit more well done was my goal!
