Smothered Breakfast Taquitos

Breakfast can be a bit of a challenge if your household is anything like mine; someone always wants something different, or we’re running behind schedule. Smothered breakfast taquitos are easy to throw together and pop in the air fryer and can even be made the night before or kept in the freezer until ready. The best part is making a variety of flavors to satisfy everyone’s individual taste.

Here’s What You’ll Need:

Ingredients:

  • Flour tortillas (mini street tortillas or small work well)
  • 6 eggs
  • 2 Tbsp milk
  • salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 Tbsp onions, finely diced
  • 3-6 strips of bacon
  • Favorite salsa or green chile verde sauce
  • Additional toppings as desired

Preparation:

  • In a small ball, whisk together milk, seasoning, and eggs
  • Scramble your eggs in a small pan
  • Crisp bacon strips (I prefer to use my air fryer set at 350 degrees for 11-13 minutes)
  • Chop up bacon upon cooling
  • Add desired amount of eggs, bacon, onions, cheese, and any additional toppings to tortilla and roll
  • Place rolled taquitos into your air fryer (oven and microwave work well too) and set to 350 degrees for 6 minutes
  • Remove carefully and place on plate, smothering taquitos with your salsa and additional cheese. Allow to melt on its own or pop in the microwave for a few seconds

Delicious Breakfast Taquito Ideas

I love making veggie breakfast taquitos. I fill mine up with onions, black olives, spinach, tomatoes, and mushrooms. All-meat taquitos are hearty and flavorful, adding Italian sausage, ham, and bacon to a blend of cheeses. And for spice-lovers, I highly recommend you whip up and egg and cheese mixture with plenty of chorizo, jalapeños, and tomatoes. I add a bit of sour cream and cilantro on top of mine.

Preparing in Advance

Taquitos are easy to prepare in advance, allowing you plenty of time to pop them in the air fryer in the morning. If you’re feeding several hungry stomachs, line them in a casserole dish, add your salsa and cheese, and bake in the oven. You’ll have plenty of room to lay out multiple flavors to satisfy everyone.
