What’s for Breakfast at Mandy’s House?
Remember yesterday I shared a photo of my cousin Martha? Not only is she an amazing woman, so are her three daughters. This morning I ran across her oldest daughter’s recipe for Omelet Muffins and liked it so much I decided to share it with you. Thanks, Mandy!
Omelet Muffin: preheat oven to 350. For 12 muffins, mix 8 eggs with 1/4 tsp of baking powder, 1/4 cup milk, and salt/pepper to taste. Add any additional ingredients (I added sausage, fresh mushrooms and spinach, and Parmesan cheese). Grease muffin pan, add your additional ingredients and fill each tin to the rim with egg mixture, too with cheese. Bake for 8 minutes. Awesome because each family member can add the ingredients they want.
