Pumpkin Spice Crepe Recipe: Perfect For Fall and Winter
The crisp fall mornings tend to make me crave pumpkin spice EVERYTHING, and I’m willing to bet it’s not just me. While I’m pretty sure I can’t just sit around baking and snacking on pumpkin pies every day, I needed to create additional goodies to get my pumpkin spice fix. And just like that, my pumpkin spice crepes became my new go-to breakfast!
Here’s What You’ll Need:
Crepe Ingredients:
- 1 cup flour
- 4 eggs
- 3 Tbsp butter, melted
- 1 Tbsp sugar
- 1/8 tsp salt
- 1 1/2 cups 2% milk
Pumpkin Spice Filling Ingredients:
- 1 cup pumpkin puree
- 1/4 cup brown sugar
- 1 tsp pumpkin pie spice
- 1/4 tsp vanilla extract
Optional Glaze Topping Ingredients:
- 1/2 cup powdered sugar
- 1/2 tsp cinnamon
- 1 Tbsp heavy cream
- 1/ 4 tsp vanilla extract
Preparation:
Crepes:
- With a hand mixer or blender, combine all crepe ingredients and blend well
- Heat a small skillet on medium and spray with non-stick spray or coat with butter
- Poor a thin layer of crepe batter into your pan and allow to cook for roughly 2 minutes before you flip it over (your edges should slightly curl and crisp)
- Your crepes should slide off your pan easily
- Add your filling inside or on top, as desired
Pumpkin SPice Filling:
- In a small bowl, mix all filling ingredients, blending until smooth
- Heat in microwave for thirty seconds
- Fill crepes or use as a topping, as desired
Glaze:
- In a small bowl, mix all glaze ingredients until smooth
- Warm in microwave for roughly 15 seconds
- Drizzle on top of your crepes
Pumpkin Spice Filling Options
Depending on my mood, I either line the center of my crepes with pumpkin spice filling then trifold my crepes, or trifold them and use the filling as a topping. Either is a delicious option, so it’s all about your preference.
Alternatively, you could also add a touch of the filling to your crepe batter for a hint of pumpkin color and flavor. Be mindful of the amount you use, as you want your crepe batter to remain thin.
Holiday Breakfast or Snack
This pumpkin spice crepe recipe makes an incredible breakfast but I have to admit, we eat crepes for snacks and occasionally as our “breakfast for dinner.” but I’m really looking forward to making this recipe for our Thanksgiving and Christmas breakfasts this year. I may throw a little whip cream on top (ok a LOT for the kids), and serve before starting to prepare our holiday feast.
