Mini Pumpkin Pies
Before October even came to a close, I was craving pumpkin pie. While not every one in the house shared my early cravings, I thought mini pumpkin pies would be perfect for satisfying my little cravings. So, if you’re in the mood for pumpkin pie but not quite ready to make a whole pie that might go to waste, this is the ideal recipe for you! Two mini pies coming up!
Here’s What You’ll Need:
Crust Ingredients:
- 1 cup flour
- 4 tablespoons butter, melted
- 1/2 teaspoon salt
Filling Ingredients:
- 1/2 cup pumpkin puree
- 1/4 cup sugar
- 2 1/2 oz cream cheese, softened
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon
- 1 large egg
- 2 tablespoons heavy cream
- 1 tablespoon butter, melted
- 1/8 teaspoon salt
Crust Preparation:
- Pre-heat your oven to 350
- in a bowl, mix flour, salt, and butter. Mix together. Your mixture will be crumbly in texture.
- Slowly add in a small amount of cold water at a time, while continuing to mix. You should not need more than roughly 2-3 tablespoons.
- Scoop half the mixture into your hand and roll into a ball. Repeat with the second half.
- Lightly flour your surface and a rolling pin. Roll out your balls of dough to approximately 2 inches larger than your pie dish. I use a small 4 inch mold.
- Place the dough into the mold and let a bit of the excess hang out of the top. Pinch or fold the hanging edges.
Filling Preparation:
- In your mixer, mix cream cheese until smooth.
- Continue to mix on low while adding pumpkin, sugar, and salt.
- In a small dish, mix your egg, butter, and heavy cream. Pour into your mixer and continue mixing.
- Add in cinnamon and vanilla extract.
- Pour half your filling into each pie crust.
- Bake for roughly 45 minutes, checking center for ideal doneness.
- Remove and cool before serving.

This mini pumpkin pie recipe makes the perfect little snacks. And we all know it’s that time of year when pumpkin spice coffee flavors are everywhere! I enjoy my pie with a cup of pumpkin spiced coffee as an afternoon snack before the kids get home (shhh!). The great thing about this recipe is having enough for a couple minis, so when the kids DO get in the mood, there are little pies for them as well.
