Mini Cherry Cheesecakes

My sweet tooth has been a bit out of control lately. Luckily, I have a simple, no-fuss, no-bake cherry cheesecake recipe that I can throw together and enjoy in under an hour. And if you’re not a cherry fan, you can easily top these little guys with your favorite fruit or candy toppings instead!

Here’s What You’ll Need:

Pie Crust:

  • 1 sleeve graham crackers
  • 7 Tbsp butter, melted

Cheesecake:

  • 1 cup cool whip
  • 12 oz cream cheese, softened
  • 1 cup powdered sugar
  • Cherry pie filling

Preparation:

  • Melt butter
  • Crush graham crackers by hand or in your blender or food processor, then mix in butter thoroughly
  • In a mini cheesecake pan or cupcake pan, place 1 spoonful of crust in each dish, packing down crust evenly
  • Place in fridge to settle while you make your pie mixture
  • In your blender, soften cream cheese, gradually adding in powdered sugar until smooth
  • Fold in cool whip until completely blended
  • Spoon in desired amount of cheesecake mix into each dish and pat gently
  • Allow to settle in fridge for at least 30 minutes
  • Top with cherry pie filling before serving

These little desserts are perfect for an after school snack for the kids nad grandkids, an after dinner treat, or your next event or gathering. It’s hard to believe you can whip up these little bites and enjoy in under an hour. With this no-bake recipe, even your sweet tooth won’t mind the short wait. And if you’re getting ready for a holiday event, add in a drop or two of food coloring and top with candy corn, crushed candy cane, or red, white, and blue sprinkles for any occasion you are celebrating.

Helpful Preparation Tip:

Using a mini cheesecake pan with removable bottoms is a huge time saver. For a while, I was just fine with my trusty cupcake pan, but after one use of a removable bottom cheesecake sheet, I was hooked. It makes it so much easier to pop out your mini bites after they’ve been chilling in the fridge. You’ll get a clean, smooth pie every time and forgo the extra effort and time you may put into carefully removing them from your traditional pan.
