White Chocolate Blueberry Scone Recipe

When a friend introduced me to scones (yes…I was very late to the party), I became a little obsessed. Not only was I beginning to live in the Starbucks drive-thru, but there were limitations to satisfying my new cravings. First, if you aren’t at our Starbucks by a decent time, you may not be getting your goodies before the rest of the town snags them. Second, there are only two flavors. And I have yet to find a little bakery in my area with an array of flavors to try. So….. learning to bake them became my new goal. It should come as no surprise to some that my favorites HAVE to have white chocolate chips in them. If you’re looking for an easy and tasty scone recipe, I recommend trying this sweet white chocolate blueberry scone!

Here’s What You’ll Need:

Ingredients for White Chocolate Blueberry Scones

  • 1 cup blueberries
  • 1/2 cup white chocolate chips
  • 1/4 cup raw sugar
  • 2 tbsp sugar
  • 1 tbsp cinnamon
  • 2 1/4 cups flour
  • 1 tbsp baking powder
  • 1 cup heavy whipping cream
  • 6 tbsp butter, cold and sliced
  • 1/2 small lemon, squeezed

Preparation:

  • Pre-heat oven to 400 degrees
  • In a large mixing bowl, add your flour, baking powder, sugar, and a dash of salt.
  • If you have a pastry cutter, you can slice the butter into your dry mixture until it begins to get crumbly. You can also add in the sliced butter and work it into the dry ingredients with your hands. Don’t overdo it! You want that nice textured look.
  • Fold in your white chocolate chips and blueberries and squeeze in your lemon.
  • Slowly add in the cream, carefully blending as you avoid smashing your berries.
  • Lightly flour a surface and gently pat out your dough into a 6-8 inch round.
  • Cut your dough into 6 or 8 pieces and place on a lightly greased or parchment paper-lined baking pan.
  • Mix your raw sugar and cinnamon together.
  • Lightly coat the tops of the scone dough with any leftover cream (or pour yourself a few drops to use).
  • Sprinkle the cinnamon and raw sugar mixture over the dough before placing in the oven.
  • Bake for 12-15 minutes, or until you reach the desired golden color.
  • Cool and serve!

Additional Flavor Variations

I love the mixture of blueberries and lemon, so adding a touch more into my recipe has still yielded delicious flavor without making my dough too wet. I’ve also made a batch of lemon blueberry scones when I didn’t have quite the sweet tooth for the warm, sweetness of white chocolate chips.

You can never go wrong with a mixed berry scone! We keep dried cranberries on hand for snacking, so baking a batch of cranberry and blueberry scones is another favorite. I mix up a bit of icing to drizzle on top and brew a fresh pot of coffee to start the morning!
