White Chocolate Macadamia Nut Cookies
With summer approaching and frantically trying to pull together a tropical vacation in my spare time (enter audience laughter here), images of Hawaii have stirred my cravings for macadamia nuts. I remember eating them all the time as a kid. My mom would fly home to visit family and bring back cans of macadamia nuts. candies, and other Hawaiian treats. Sometimes relatives would send a care package with the tasty nuts packed inside. With all these memories of delicious sweets, I knew I needed a batch of white chocolate macadamia nut cookies this week!
Here’s What You’ll Need:
Ingredients:
- 2 1/2 cups flour
- 1 cup butter, softened
- 2/3 cup sugar
- 3/4 cup brown sugar
- 3 tsp vanilla extract
- 2 large eggs
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1 tbsp corn starch
- 2 cups white chocolate chips
- 1 1/2 cups macadamia nuts, chopped to desired sizes
Preparation:
- Pre-heat oven to 350 degrees
- In a large mixing bowl, mix sugars, butter, vanilla, slat, and eggs.
- Slowly add in corn starch, baking soda, baking powder, and flour. Mix well.
- Mix in white chocolate chips and continue to mix until blended well.
- Scoop desired amount of dough (I’ve started using a 1.5 tbsp a cookie scoop)
- Bake for 10-12 minutes
- Allow to cool and enjoy!
Cookie Recipe Variations
I LOVE adding cranberries into my dough when I’m in the mood for a different flavor. They add a bit or tart flavor as well as a pop of color. I highly recommend tossing a few into a small portion of your batch if you’re curious to try them out! I have also added a full banana to the dough for a delicious creamy taste.
