Mom’s Strawberry Pie -Easy to Make
Mom’s strawberry pie brings back lots of good memories.
My mother was a great cook and just like me she had a love of sweets. There were always homemade desserts on her table. There were only a few desserts she made that I wouldn’t eat. I don’t like lemon, so I was never tempted by her lemon pie. I’m not a raisin fan (my brother was) so I wouldn’t touch her raisin pie but just about everything else she baked I loved.
Mom’s been gone since 1990 and the ink on some of her recipe cards is fading but the memories of her and the great desserts and foods she cooked are still very clear in my memory. The recipes she used most often are the ones that are stained and messy looking, but I love that they are in her handwriting.
This was one of her easy go-to desserts for the summer. She made her crusts from scratch but I just buy Pillsbury pie crusts. This pie is so easy even I can’t mess it up.
Not only is it easy to make but there isn’t much clean up required. Mom and Grandma Layne made this often and it was always a hit with our family. I’m betting your family will love it too!
Mom’s Strawberry Pie
(I tweaked the recipe just a tad by adding more berries)
1 1/4 cup water
1 cup sugar
3 tablespoons of strawberry jello
2 tablespoons corn starch
Bring to boil and stir until all is dissolved.
Pour over 4 cups of strawberries in pie shell.
Refrigerate for 2 to 3 hours.
Add whipped cream to top if desired.
