Homemade Mixed Berry Biscuit Recipe

Warm, tasty biscuits make the perfect breakfast on a drizzling day, don’t they? I wasn’t expecting to wake up to overcast skies this week, but when I did, I just knew the day was calling for a hot cup of coffee and homemade mixed berry biscuits. They are easy to whip up and are delicious with or without a sweet glaze.

Here’s What You’ll Need:

Ingredients for mixed berry biscuits:

4 cups flour

2 1/2 tsp sugar

1 tsp salt

1 tsp baking soda

1 stick chilled butter (8 tbsp)

1 tbsp vanilla extract

1 14 cups buttermilk

1 cup blueberries

1 cup dried cranberries

Preparation:

Preheat oven to 350 degrees.

Dice up your chilled butter and place it back in the fridge so it remains as cold as possible until ready for use.

in a large mixing bowl, combine all your dry ingredients: flour, baking soda, salt, sugar.

Next, add in slices of butter and work the dough with your hands. Keep in mind, you’ll want to see the butter turn into small chunks within the dough and then you can stop.

Slowly add in your buttermilk and blend with a fork. You won’t want to over-mix.

Next, gently fold in the blueberries and cranberries.

Gently pat your dough out onto a lightly floured surface and cut out rounds approximately 2 inches .

Then, place your biscuit dough onto a baking sheet a few inches apart and bake for 14-16 minutes, until lightly golden brown.

Finally, allow to cool slightly, then serve warm.

Delicious Biscuit Variations

If you aren’t a huge blueberry or cranberry fan, I highly recommend trying your biscuit recipe with strawberries. Whether you use fresh or frozen strawberries, they are just as delicious in this homemade biscuit recipe!

For an extra special treat, sprinkle a few mini chocolate chip morsels into a small portion of the batter and try a chocolate strawberry biscuit. I guarantee the kids and grandkids will love it! I like to drizzle a bit of chocolate syrup over the top with a tiny dollop of cool whip. It makes a great Valentine’s breakfast.
