Chicken Veggie Pasta with Bacon Recipe

If you popped by last week, you may have seen the recipe for oven baked bacon-wrapped asparagus. It makes an incredible side dish as well as an appetizer and i have to say, it entices the kids and grandkids to try asparagus! So, as promised, I’m sharing the chicken veggie pasta with bacon I served with my bacon-wrapped asparagus last week. It’s juicy, flavorful, and easy to throw together for lunch or dinner.

Here’s What You’ll Need:

Ingredients for chicken veggie pasta with bacon:

  • 3 chicken breasts
  • salt and pepper to taste
  • 1 tbsp minced garlic
  • 1 cup zucchini
  • 1 cup asparagus cut into 3rds
  • 4 strips of bacon
  • 1 box pasta
  • 2 tbsp olive oil
  • 1 cup water or chicken broth

Preparation for chicken veggie pasta with bacon:

  • Fill your instant pot with 1 cup of water and place frozen chicken breasts into the pot. Add salt and pepper. Cover and pressure cook on high for 11 minutes. Allow to naturally release for 5 minutes.
  • Alternatively, you can cook your chicken breast by your preferred method.
  • Cook pasta while preparing veggies.
  • If you’ve prepared bacon-wrapped asparagus, use leftover asparagus and extra bacon strips for your pasta saute. Cut asparagus and bacon strips into smaller pieces.
  • Heat saute pan on medium with 1 tbsp oil and garlic.
  • Add bacon and saute for a couple minutes.
  • Add in zucchini and asparagus, season and continue to saute for several minutes.
  • Drain pasta and add to your bacon veggie saute. Coat with 1 tbsp olive oil.
  • When cheick breast is cooked, slice and serve on top of your veggie bacon pasta.
  • Top with parmesan cheese and serve with your bacon-wrapped asparagus.

Chicken Alternatives

If you’re looking for an alternative to chicken breast, this is an ideal dish for shrimp. You can saute your shrimp minutes before you pasta is finished cooking. I like to saute it in a bit of butter instead of the olive oil so it has a bit more of a scampi flavoring.

You can also cook up pork chops for your veggie bacon pasta. I like to season mine with a dry rub and bake in the oven. If you haven’t tried Teresa’s pork shop recipe, it’s a must!
