No-Bake Mini Chocolate Chip Cheesecake Recipe
It was mini cheesecake time again, and this time a prepared a couple variations of my mini chocolate chip cheesecake recipe to satisfy everyone’s sweet tooth. Don’t worry, the flavor variations were simple to do, so you’ll have several options to choose from!
Here’s What You’ll Need:
Oreo Pie Crust:
- 20 Oreos, finely crushed
- 4 Tbsps butter, melted
Pie Filling:
- 1/2 cup mini chocolate chips
- 5 oz cream cheese, softened
- 1 1/2 cups of Cool Whip
- 1 1/2 cups powdered sugar
PREPARATION:
- Line a cupcake pan with reusable or paper cupcake wrappers
- Crush your Oreo crust cookies in a food processor or place them in a zip lock bag and crush by hand or rolling pin
- Mix the crushed Oreos with the melted butter and spoon into each holder, patting down firmly to form an even crust
- With a hand or stand mixer, whip the cream cheese until you reach a soft consistency
- Add in the powdered sugar
- Fold in your Cool Whip and mini chocolate chips
- Spoon the filling mixture into each cupcake holder
- Keep chilled until serving to help them keep their form
Cheesecake Recipe Variations
Now, if you prefer a bit less chocolate, you can always prepare a traditional graham cracker crust. I use 1 sleeve of graham crackers and 6 tbsp of melted butter for a delicious buttery crust. I try to use the cinnamon grahams when available or add in my own cinnamon and sugar for extra sweetness.
For a few of my cheesecakes, I added a dab of cool whip and topped it with chilled caramel syrup. I love chocolate caramel treats, so this was perfect for me. It reminds me of a turtle cheesecake, minus the nuts.
This no-bake recipe is so simple to make and a lot of fun to do with kids or grandkids. Let them play around with the toppings and filling and see what they come up with!
