Mini Oreo Pie Bites

The holidays are just around the corner and there’s nothing for fun than whipping out the Christmas treat recipes! From holiday cookies and pies to delicious hot chocolate mixes, it’s the time of year to start having a little more fun with your baking. Oreo pie is already easy to throw together, so why not add another few steps and spread a little holiday cheer?

Here’s What You’ll Need:

Ingredients:

Crust:

  • 20 Oreos, finely crushed
  • 4 Tbsps butter, melted

Pie Filling:

  • 8-10 Oreos, broken into chunks
  • 5 oz cream cheese
  • 1 1/2 cups of Cool Whip
  • 1 1/2 cups powdered sugar

Toppings:

  • Extra Oreos as toppers
  • 1 cup melting wafers
  • Green gel food coloring
  • Red sprinkles

Preparation:

  • I use reusable silicone cupcake holders, but greasing a cheesecake tin or cupcake tin works just as well
  • Crush crust Oreos in a food processor or in a zip lock bag by hand/rolling pin
  • Mix crushed Oreos with melted butter and spoon into each holder, patting down to form an even crust
  • In a zip lock back, crunch 8-10 Oreos into bite-sized chunks and set aside
  • With a hand or stand mixer, whip cream cheese to a soft consistency
  • Add in powdered sugar
  • Fold in your Cool Whip and Oreos
  • Spoon the filling mixture into each cup
  • Chill in the fridge for 30 minutes
  • Follow melting wafer instructions (typically half power for 30 second intervals)
  • Add desired food coloring and blend well
  • Dip your Oreos in the green chocolate mixture and top with red sprinkles
  • Remove minis from the fridge ad top with sprinkles and your Oreo toppers
  • Keep chilled until serving to help keep form
