No-Bake Cheesecake

Whether you’re looking for a fun dessert to celebrate a birthday, or just in the mood to whip up some colorful creations with the kids and grandkids, no-bake cheesecake jars are the perfect treats!

No-Bake Fun

No-bake recipes are ideal when you’ve got little ones in the kitchen with you. Wrap them in an apron and get ready to have some fun! These no-bake cheesecake jars give them a chance to spend time with you learning to bake. You may have messy little hands to clean up, but it’s a small price to pay, right?

Here’s What You’ll Need:

Ingredients:

Crust

  • 2 sleeves of graham crackers
  • 2 tbsps sugar
  • 1 stick of butter, melted

Cheesecake:

  • 1 cup heavy whipping cream
  • 24 oz cream cheese, room temperature
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1 small lemon, juiced
  • 1/4 cup sour cream
  • Food coloring

Preparation:

Crust

  1. Crush graham crackers into small crumbles. I use cinnamon sugar grahams for a bit of extra flavor, crushing them in a large zip lock bag.
  2. Mix crackers, melted butter, and sugar well.
  3. Distribute evenly into jars, bowls, or your chosen serving dish.
  4. Pack down lightly.

Cheesecake:

  1. With a hand or stand mixer, mix the whipping cream on medium to medium-high until it begins to form stiff peaks.
  2. Add in sugar and cream cheese, turn mixer to medium and continue to mix.
  3. Once creamy, add in vanilla, lemon juice, and sour cream.
  4. Continue to mix until completely blended.
  5. Separate the cheesecake mixture into individual bowls (one for each color you plan to create).
  6. Add 1-2 drops of coloring, according to desired shade of color. Blend with a spatula.
  7. Layer cheesecake on top of your crust.
  8. Top with desired toppings and chill for 6-8 hours.

Toppings and Layers

Rainbow sprinkles and whip cream are always a hit in our house! But there are so many creative toppings and layering choices. Try making a variety and explore. Mini chocolate chips, peanut butter chips, or various jelly flavors make incredibly tasty options! You can also save some of your graham cracker crust and layer crust and cheesecake several times. One of my go-to’s is cherry pie filling in between layers of creamy cheesecake with a dash of whip cream on top. The choices are endless.
