Pork Chops
Do you ever get tired of your own cooking? I do! I also get tired of asking my husband what he wants for supper and his usual response, “I don’t care.” Occasionally he will ask for spaghetti, that’s always been one of his favorites but you can only eat spaghetti every so often.
The other day I was searching through the freezer for something to inspire me. I found some pork chops and put them out to thaw. It’s been really hot here and the idea of grilling them didn’t appeal to me. The heat index is over 100 degrees and the humidity is unbearable. Kentucky summers are like an outdoor sauna.
Anyway, I decided to bake them with some spices and they turned out so delicious that we had them again this week!
I started with some olive oil and coated them with just enough on both sides to make the spices stick.
Next I chose the spices I wanted to use.
I mixed equal parts of each spice together and then sprinkled over both sides of the pork chop and put in oven on 350 degrees.
I baked them for an hour and here’s what they look like when done.
I am NOT a professional cook like my friend Susan Williams (check out her blog) but I do love good tasting food. I’ve made these twice now and the first chops were better than the second batch. Here’s why……I overcooked these a bit. 45 minutes would have been better than an hour, maybe even a little less depending on the thickness of the chops. Also on the first batch I sprinkled the spices. On the second I coated them, it was too much.
Were they still good? Yes! But the first batch was definitely the best! Did they all get eaten both times? You gotta be kidding me. In this house they disappeared like the rabbit in the magicians hat!

4 to 6 chops medium thick
salt, pepper, garlic power, onion powder, oregano
One tablespoon each in a bowl, stir until well mixed, sprinkle over chops
Bake at 350 until done, should still be juicy!
