Supper at the Secula’s House

Supper time at our house is usually a dreaded event for me because I never know what to cook. I get asked, “What’s for dinner?”  and my usual reply is “I don’t know.”  Last night’s dinner started with some lovely looking thick cut pork chops but I had no idea what to do with them.

We started with a skillet with some olive oil and garlic (gotta love that!)  I had some colorful bell peppers in the fridge and so we began thinking, hmmmm that might work!  So my husband and I (I love it when he cooks with me)  started chopping and cooking. Pork chops, red, yellow and orange bells pepper strips, and onion go into the pan and start to sizzle.

Then my husband added a dash of soy sauce, some paprika, chili powder, basil, salt and pepper (and it may never taste the same again because no measurements were used.)  I look through the pantry and found a package of Mexican flavored rice and we added that to the menu.  The simple spoken thought of “some tortillas would have been good with this” led me to an internet search for a recipe which sounded simple enough, and except for the mess I had to clean up after, it really was.  I even got a chance to break out the rolling pin I made in my high school shop class many moons ago!

I love it when an experimental supper turns out great, because believe me we have had them that were major flops never to be mentioned again!  So much like this post, when I wasn’t sure what I wanted to do and which direction to take, everything just fell into place. I know it isn’t my normal “crafty” post, but I felt pretty proud of myself as those tortillas were eaten up!

Here is the tortilla recipe I used found on Cooks.com:

EASY HOMEMADE FLOUR TORTILLAS
3 cups flour
1 tsp. salt
1/3 cup vegetable oil
1 cup warm waterCombine all the flour, salt, vegetable oil, and water until it forms a dough.

Roll the dough into a big ball and take about an 1 to 2 inch pieces off. Pat the dough flat with your hands or take a rolling pin and roll into circles.

Put the dough on a flat pan on the stove and let the sides cook until there are little brown specks on both sides like you would see on other tortillas.

(The only thing we had to do different was to toss them in the oven for a few minutes at 325′. I realized after the first couple that I was making them too thick so they were a little doughy, but a couple of minutes in the oven helped that problem.)
