Creamy Lemon Herb Chicken
Finding ways to keep chicken dishes new and interesting in our house can be a bit of a challenge sometimes. I remember dish upon dish of plain ‘ole chicken breaks for a period when I was growing up. So, when the kids complain with “that again???” I completely understand where they’re coming from. But, with some time, patience, and creativity, I try to whip up new recipes for them to try as often as I can. And so the Creamy Lemon Herb Chicken recipe was born!
Here’s What You’ll Need:
Ingredients:
- 4-5 chicken thighs
- 3 Tbsp butter
- 2 cups chicken broth
- 3/4 cup heavy whipping cream
- 1 tsp pepper
- 1 tsp onion powder
- 1/2 Tbsp Italian Herb Seasoning
- 1/2 cup finely chopped spinach
- 1 tsp cornstarch
- 1 tsp garlic, minced
- 1 lemon
Preparation:
- Prepare your chicken thighs – I like to have plenty of time to multitask so I toss my frozen thighs in the instant pot with 1 cup of chicken broth and a splash of seasoning. I set it to pressure cooker for 13 minutes and manually release as soon as it finishes. Perfect every time!
- In a saucepan, add butter and garlic and sauté for 2-3 minutes
- Add in heavy cream and chicken broth and stir on medium-low
- Add in spinach and squeeze lemon juice into sauce
- Add in cornstarch if you prefer your sauce to be a bit thicker
- Prepare a bed of pasta or rice while your sauce simmers
- Add chicken to your sauce and allow to sit for a few minutes, soaking up the sauce
- Serve and enjoy
Chicken Dish Variations
This chicken and light cream sauce recipe is delicious with a bed of bowtie or penne pasta. While it’s also great with a side of spaghetti, I prefer my chicken parmesan recipe with long noodle sides. We also enjoy this chicken dish prepared on a bed of white rice. The rice soaks up the sauce nicely and the lemon gives it the perfect zest.
If you love veggies, try adding in sautéed mushrooms, red onion, and sun dried tomato to the sauce. It really adds to the flavor of the recipe and the colorful presentation is a big hit too.
