Instant Pot French Dip Sandwich for Any Meal

One of my favorite go-to recipes is a mouth-watering french dip sandwich ….. with a bonus. With the kiddos at home full time as we shelter in place, finding meals to satisfy all three of us ALL the time can be a bit of a challenge. That’s what makes this delicious instant pot roast recipe a life-saver in our home.

Ways to Prepare

While my son and I can’t get enough of this juicy, toasted sandwich, my daughter prefers hers prepared pot roast style. Tossing in a couple of diced potatoes only adds on a few minutes and makes everyone’s taste buds happy!

Prep Time: 20 minutes | Time: 1 hr 30 minutes | Servings: 6-8

Here’s What You’ll Need:

Ingredients:

  • 3 lbs chuck roast
  • 1 1/2 cups water
  • 1 Tbsp olive oil
  • 1 packet of dry au jus seasoning mix
  • 1/2 packet of dry ranch seasoning mix
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 cups shredded mozzarella cheese (or cheese of choice)
  • 8 hoagie rolls
  • 3 Tbsp softened butter
  • 2 large potatoes, diced (optional)

Preparation:

  1. Add the olive oil to your instant pot and choose saute.
  2. Season the roast with salt, pepper, garlic, and onion, then sear on each side.
  3. Sprinkle in dry ranch, dry au jus, and water.
  4. If you’re adding potatoes, toss them on top.
  5. Turn instant pot to pressure (high), ensure the release valve is sealed, and close your lid.
  6. Set pressure cook timer to 1 hour 30 minutes.
  7. Once your timer is done, allow the pot to naturally release for 20 minutes before venting the remaining pressure.
  8. Shred the roast into your desired sizes and allow it to soak in the au jus while you prepare the rolls.
  9. Set oven to broil while you butter your bread rolls and add desired amount of cheese.
  10. Place rolls into the oven for 3 minutes, keeping an eye on them, as ovens may vary.
  11. Pile your sandwich rolls with the shredded roast, serve with a side of au jus for dipping, and prepare to fall in love!

I’m a cheese lover so I tend to sprinkle a little extra on top, to complete my sandwich.

And with a few minor modifications, I’m able to whip up a plate for my daughter just as easily! When it comes time for leftovers, she loves the roast and potatoes drizzled over freshly steamed rice when we prepare leftovers.

In under 30 minutes, you can prep two satisfying meals, with plenty of leftovers. We love it for lunch and dinner options. And the roast is amazing after soaking in the au jus overnight!
