Hamburger Casserole

I love recipes that are quick, easy and delicious. This casserole checks all those boxes.

Like many of you, I’m tired of staying home and cooking…and cooking…and cooking some more. Last week I couldn’t think of anything I wanted so I went to the freezer, grabbed a 2 pound package of ground sirloin and a package of hash browns and with just a few more ingredients we had a meal.

Most of these ingredients are in everyone’s pantry so you probably won’t have to go to the store, which is another thing I liked about this casserole.

What you will need

  • If you don’t have ground sirloin just use hamburger.
  • 2 pounds ground beef or sirlon
  • 2 cans mushroom soup
  • 1 small onion
  • 1 large can mushrooms, drained
  • Shredded mild cheddar cheese
  • 1 package hash browns (tator tots would work as well)

Nana’s Hamburger Casserole

  • Brown hamburger until no longer pink, chop onion and sauté it with meat, drain
  • Add mushrooms, 2 cans mushroom soup, dash of salt and pepper (or more if you like)
  • Spread mixture in bottom of casserole dish. Spread hash browns over hamburger mixture.
  • Top with cheese. We like cheese so I was liberal with it. Add less cheese or a different kind of cheese to change it up!
  • Bake on 350 for 40 minutes.

I added some peas as a side dish but they also could have been added to the hamburger mixture. I didn’t do that because I have a son that is usually here at supper time who doesn’t like peas. You could also add green beans or corn (drained) for another version.

  4. I just made a cheeseburger casserole for my mother and me last week using a donated box of Mac n Cheese since I was out and going to the store can be nerve racking. Your recipe looks better and I realized I didn’t have hash browns, tater tots or crush potato chips for the top until it was too late. I still have some left in the fridge, but am all about that leftover Easter ham right now. I love Campbell’s Beefy Mushroom soup and wonder how that would taste in this recipe. All I had were low sodium soups which is the only canned soup I eat now and even that has too much salt in it. I think the onions and mushrooms really put this a step above your average comfort food casserole. I also found out that a little unsweetened almond milk was okay to use since I didn’t have any other milk on hand.
