Easy Lemon Bar Recipe
With the weather heating up, lemonade has been our go-to beverage lately. We’re just a little bit addicted to Sonic strawberry lemonade. So, when we were deciding on a dessert for the week, it only seemed fitting to make lemon bars. They’re perfectly sweet and sour and so easy to make! It’s also a great recipe to try with the kids and grandkids. Just be prepared for a little mess when you get to the powdered sugar!
Here’s What You’ll Need:
Ingredients for Lemon Bars:
Crust:
- 1/3 cup powdered sugar
- 1/2 cup softened butter
- 1 cup flour
Lemon Filling:
- 2-3 lemons / roughly 1/2 cup lemon juice
- 3 eggs
- 1 1/3 cup sugar
- 1/2 cup flour
- powdered sugar for topping
Preparation:
- Pre-heat oven to 350 degrees.
- Lightly coat a baking pan and set aside. 8×8 or 8 inch round works well.
- Mix butter, flour, and powdered sugar with a mixer on medium until your dough is formed.
- Pat the dough crust evenly into your pan and bake for 8-10 minutes.
- As your crust bakes, mix together lemon filling ingredients, blending until smooth.
- Poor lemon filling over your crust then place in the oven for 25-30 minutes. Remove once it begins to turn a slight golden brown.
- Allow to cool completely before sprinkling your powdered sugar over the entire surface.
Lemon Bar Tips
Once you pull your lemon bars from the oven and allow to cool, you may want to chill them in the fridge. This is completely a preference but they are pretty tasty when served chilled. You can let them chill for roughly one hour, then remove and add your powdered sugar topping.
It also makes the lemon bars a bit easier to cut and serve when they have been chilled. However, if you prefer them at room temperature, you can use a sharp, wet knife to make a clean slice.
