Chocolate Dipped Rice Krispies Treats

I remember coming home from school when I was little and always smelling something that had been baking. Whether it was chocolate chip cookies or apple pie, there always seemed to be a freshly baked dessert waiting for us at least once a week. One of our favorite go-to’s always seemed to be Rice Krispies Treats. You would think it would be something more exciting, like mom’s chocolate mint brownies, but it was the Rice Krispies Treats that really made our eyes wide with anticipation.

Lately I’ve developed a craving for anything dipped in chocolate. If it’s covered in sprinkles, it’s an extra bonus! I’m not sure if it’s the pretty Pinterest images or my sweet tooth I should blame, but it’s becoming an addiction around this house! So, in the spirit of school back in session for both kids, I whipped up a batch of chocolate dipped Rice Krispies Treats they can enjoy after school.

Here’s What You’ll Need:

Ingredients for Chocolate Dipped Rice Krispies Treats:

  • 6 cups Rice Krispies
  • 3 1/2 tbsp butter
  • 16 oz tiny marshmallows
  • 1 tsp vanilla extract
  • Frosting:
  • 1 cup chocolate chips (white, milk, or dark)
  • 1 tsp coconut oil
  • sprinkles!

Preparation:

  • In a large glass mixing bowl, melt your butter for 30 seconds.
  • Add in 16 oz of tiny marshmallows and return to microwave. Heat for 45 seconds, keeping an eye out for rising, runaway marshmallows!
  • Stir slightly then return for an additional 30 seconds. Stir. Repeat if necessary.
  • Once your mixture is smooth, add in your Rice Krispies a bit at a time. Stir well.
  • Mix and fold gently until blended thoroughly.
  • Grease a 9×13 pan or casserole dish.
  • Pour and lightly press Rice Krispies mixture into the pan and chill in the fridge for 30-60 minutes.

Chocolate Dip Preparation:

  • Heat coconut oil and chocolate chips at 50% power for 30 second intervals until it blends smooth.
  • Cut treats into squares or rectangles and dip desired area into melted chocolate. Lay on cooling rack or parchment paper lined cookie sheet and add sprinkles before chocolate dries.

This colorful and tasty treat is the ideal fun food for kids to make! Sure, it’s sticky and messy, but it’s so easy to prepare! Have your kids and grandkids choose food coloring for their chocolate dip and their favorite sprinkles, then let them get creative!
