Shrimp Pad See Ew (A Thai Noodle Dish)

The other day, I realized I still had some prawns in the freezer that hadn’t been devoured yet. The kids weren’t in the mood for ur usual go-to seafood dinners, so I decided to indulge in a dish just for myself. I’ve always loved Pad See Ew, a Thai noodle dish, but rarely make it anymore since the kids aren’t huge fans of all the greens I load into it. Go figure! So, it was a “mom wants Pad See Ew” day in the kitchen.

Here’s What You’ll Need:

Ingredients:

  • 1 lb shrimp or prawns
  • 2 tsp light soy sauce
  • 1 1/2 tbsp dark soy sauce
  • 1/2 tsp sugar
  • 1/4 tsp brown sugar
  • 2 tsp oyster sauce
  • 1 bag flat rice noodles (I use the wide style)
  • 2 tbsp garlic, minced
  • 3 1/2 cups Chinese broccoli (Bok Choy tastes great too)
  • 3 eggs
  • salt and pepper to taste

Preparation:

  • In a small bowl, combine the oyster sauce, soy sauces, sugars, and garlic.
  • Boil water and begin cooking your noodles.
  • If you have a wok, heat it to medium-high and add your oil. Add in your shrimp and cook until pink. Remove shrimp and set aside. A large pan will be fine if you don’t have a wok!
  • Turn wok to high and add the eggs, scrambling as you cook them. Remove and set aside with shrimp.
  • Add Chinese broccoli and half of your sauce to the wok. Stir fry for 5 minutes, being careful not to overcook, as you want it a bit crisp.
  • When noodles are cooked, add the to your wok with the remaining sauce. Coat noodles well and allow a few minutes for the sauce to soak in and thicken.
  • Add in your eggs and shrimp and toss noodles.

What Does Pad See Ew Taste Like?

Pad See Ew is a blend of flavors – it has a bitter sweet taste that can be enhanced or toned down by the amount of sugar you add or leave out. I like mine a bit on the sweet side, so I add in a bit more brown sugar. The soy sauces help add to the flavor as well. Light soy sauce is very thin and gives you the salty flavor. This is the most widely used soy sauce. A dark soy will be thicker in texture and have more of a sweet than salty taste. It is aged longer than a light soy, so the sarmalizing is what adds to the sweetness.

The dish is also enhanced by your choice of protein you add to it. Chicken is very popular in Pad See Eew some restaurants will even call this dish Thai Chicken Noodle (in case you’re searching for it on a menu to try! It’s delicious with anything you add to it.
