Shrimp and Vegetable Fettuccini Recipe

If you’re looking for a delicious and easy to make pasta recipe for lunch or dinner, you’re in luck. This shrimp and vegetable fettuccini recipe is incredibly flavorful and easy to customize to your liking. Sauté your favorite veggies, toss in your shrimp and pasta and your taste buds will be in heaven!

Here’s What You’ll Need:

Ingredients:

  • 2 tbsp oil
  • 16 oz fettuccini noodles
  • 1 cup mushrooms, sliced
  • 1/2 cup spinach
  • 1 tbsp garlic, minced
  • 1 cup vegetable broth
  • 1 lb shrimp
  • pepper flakes, salt and pepper to taste

Preparation:

  • Heat oil over medium heat and sauté garlic
  • Add in shrimp and mushrooms and sauté for several minutes
  • Add in spinach and continue to sauté until spinach is cooked
  • Pour in vegetable broth and allow to simmer for 3-4 minutes
  • Mix in cooked fettuccini and blend well until noodles are coated
  • Season with pepper flakes, salt, and pepper to taste

Vegetable Variations

While my kids aren’t the biggest veggie lovers, I enjoy sautéing different vegetables each time I make this dish. Zucchini and carrots add wonderful flavor and an extra splash of color to this dish. I’m also a red onion fan and often add a few slivers to my own portion. It’s an easily customizable dish, so have fun exploring and tossing in your own favorites.
