Shredded Chicken Soft Tacos
Whether you enjoy your Mexican food with a spicy kick or a mild flavoring, I have the most amazing shredded chicken taco recipe for you! They’re quick, easy, juicy, and addicting. And if you’re lucky enough to have leftovers, they’re just as delicious after a night soaking in the juices.
Here’s What You’ll Need:
Ingredients:
- 4 chicken breasts or 5-6 thighs, frozen or thawed
- 2 cans Rotel tomatoes and green chile (select desired spiciness)
- 1/2 cup chicken broth or water
- 2 limes, 1 cut for garnish, 1 squeezed for chicken mixture
- 1 packet taco seasoning
- cilantro, chopped
- salsa
- sour cream
- Avocado, sliced
- corn or flour tortillas
Preparation:
- In your instant pot, add your chicken, Rotel, lime juice, and taco seasoning, seal and pressure cook on high for 15 minutes
- Naturally release for 8-10minutes then quick release
- Remove chicken carefully and shred, then return to the pot
- Add in cilantro
- Prepare your tortillas by melting cheese inside
- Pile on your chicken mixture and garnish as desired
Spicy Chicken Taco Options
I love my food spicy, so using hot Rotel is a must for me. When the kids aren’t in the mood for a lot of spice, I choose to either use a can of hot and a can of mild, or I cook with all mild and add my own spices in my salsa garnish. Either way, you’re going to have tender, flavorful chicken.
Side of Pico
I always whip up a side of green chile pico with these shredded chicken tacos. The kids love having chips and pico as an appetizer, while I like to smother my tacos in it. The chunks of garlic, tomatoes, onion, and green chile are delicious with lime juice, cilantro, and seasonings to taste. Plus, it keeps well in the fridge for several days, so make a lot and enjoy!
