Rainbow Sugar Cookies Ice Cream Sandwiches for kids (and adults!)
There’s no better time for ice cream than summer, right? So, why not have some fun in the kitchen with your kids or grandkids and get a little creative? Making colorful sugar cookies is always fun for the kiddos, but pairing them with ice cream and rainbow sprinkles? What could be better?
Rainbow Sugar Cookies
Here’s What You’ll Need:
Ingredients:
- 2 3/4 cups of all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup butter, softened
- 1 1/4 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1-3 drops of your favorite gel food coloring
- Rainbow sprinkles
- Vanilla ice cream
Preparation:
- Preheat oven to 350°F and line your cookie sheet with parchment paper
- Combine flour, baking soda, baking powder and salt in one bowl
- Mix the butter and sugar together in your mixer on medium
- Slowly add in your bowl of dry ingredients to the mixer
- Add in your egg and vanilla extract and continue mixing
- Remove dough and separate into even amounts, according to how many colors you will be making
- Place one section at a time back into your mixer, adding your desired amount of food coloring. Mix on medium-low until color is blended, being careful not to blend too long as dough may become sticky
- Remove colored dough, rinse mixing bowl, and repeat process with next color
- Roll balls of approximately 1 1/2 tablespoons and place 2 inches apart on your cookie sheet
- Bake for 8 minutes
- Remove and cool completely
- Once cooled, scoop ice cream onto the bottom of one cookie, pressing gently to spread out evenly
- Place second cookie on top of ice cream
- Sprinkle your rainbow sprinkles along the edges of the ice cream sandwich

If you’re making these with the kids, prepare to get a little messy, but I promise you, you’ll have so much fun! They don’t take much time to make so you’ll have the perfect snack in no time. The hard part will be choosing which color to eat first! They make great desserts, birthday treats, and are always a bbq favorite.
