Leftover Turkey Recipes and The Day After Thanksgiving
As usual I cooked too much, ate too much and the day after Thanksgiving I feel like a truck has run over me.
The first thing I reached for this morning was coffee….I don’t even want to see food for several hours, maybe longer…because the picture above was my plate of food last night!
Game Fun
After we ate it was time for some game fun. I am NOT a big game fan and lots of times I “pass” when it comes to playing games, especially board games. But last night we played Reverse Charades and it was a lot of fun. If you’ve never played I highly recommend it. I promised my family I would not show the pictures of film clips of them acting out “Cuckoo Clock” and “Humpty Dumpty,” but trust me…it was hysterical. What I will show you is a ten second clip of “Tidal Wave.” Would you have guessed?
Get It Yourself Leftover Day
Today is officially “Get it yourself leftover day” at our house. If there is still turkey left tomorrow (and there probably will be because I cooked turkey and ham) then I need a recipe or two. I don’t want anything hard, complicated or that takes too many ingredients because I don’t have an ounce of energy left and I don’t want to go to the store. How people find the energy to go Black Friday shopping is beyond me. I’m a Cyber Monday person all the way! If I can’t click on it and buy it, it stays in the store.
My Go-To Recipe for Turkey Casserole
I’ve done this one for years and it’s simple, easy and quick.
Chop up turkey into bite size pieces. For a small casserole put two cups of turkey pieces into a bowl. Add one small container of sour cream, one can mushroom soup, one can mushrooms drained, mix. Put in buttered small casserole dish. Top with crushed crackers. Dot with butter. Bake at 350 for thirty to forty minutes.
Because I have such a big family I double and triple this sometimes.
