Blueberry Banana Bread-A Delicious Treat

Blueberry Banana Bread goes great with a cup of coffee in the morning, or a glass of milk before bed. You can also eat it in the middle of the day as a snack.

Because we own a blueberry farm I cook with blueberries as much as possible. This loaf of bread was made by my friend Peggy with some of our blueberries and brought to our house as a gift for my husband. Peggy knows Bill likes something sweet with his coffee in the mornings and this bread is a delightful way to start the day.

Bill may like it with his coffee, but I like it all day long because of the blueberries and nuts. I have an ongoing love affair with both.

This is what it looks like right out of the oven cooling on the rack. Peggy brought it over and when I lifted it to the plate it crumbled a little bit but I promise it didn’t affect the taste.

One reason I like baking sweet breads is that they taste like a dessert but they are so easy to make. You just mix up your batter, pour it into the greased pan and bake. No icing. No big mess. Just a nice loaf of sweet bread.

Recipe for Blueberry Banana Bread

Here’s the recipe so you can try it for yourself! Of course, if you want some Bellview Blueberry Farm blueberries to go in your bread you will have to come to Kentucky to get them! Come on over. I might just give you some bread or a muffin!

Blueberry Banana Bread
1 3/4 Cup Flour
1 tsp. Baking Powder
1/8 tsp. Baking Soda
1/4 tsp. salt
1/2 Cup Butter, softened
1 cup Sugar
2 Eggs
1/4 cup Milk
1 tsp. Vanilla
3 ripe Bananas,  mashed
1 1/4 Blueberries ( I add more)
1 cup Chopped Walnuts,optional

INSTRUCTIONS:
Preheat oven 350; prepare a 9×5 bread pan with cooking spray .
Combine flour, baking soda, baking powder and salt. Set aside.
In mixing bowl beat sugar and softened butter, beat until fluffy, add eggs, milk and vanilla. Mix well, beat in banana and nuts. Fold in blueberries .
Pour into prepared pan. Bake 45-50 minutes, until tester comes out clean. Remove from oven, cool 15 minutes before removing from pan.
