Chocolate Chip Banana Bread
Several months ago, my daughter came to me, asking if we had ingredients to make banana bread. Who knew that a school project would also become our household’s favorite breakfast, snack, and dessert? Let’s just say you won’t find a slice left if you aren’t quick. I’m not exaggerating when I tell you that a loaf of banana bread doesn’t last twenty-four hours in our house anymore!
The Perfect Banana Bread Recipe
Coming up with the perfect blend of ingredients soon became my own little challenge. With each new batch, it still seemed like something was needed. So, I toyed with ingredients and measurements until our taste buds agreed it was perfect. I enjoy tossing in a few extra ingredients now and then, just to keep it interesting. Mini chocolate chip banana bread seems to be the kids’ favorite, so, sharing it with all of you was a no-brainer. It’s unbelievably moist, full of flavor, and will satisfy any chocolate-lover’s craving!
Prep Time: 7 minutes | Bake Time: 1 hour
Here’s what you’ll need:
Ingredients:
- 3 large, ripe bananas (mashed)
- 1 1/2 cups of all-purpose flour
- 1 tsp of baking soda
- 4 tbsps of softened butter
- 1 egg
- 1 tsp of salt
- 1 tsp of vanilla extract
- 1 cup of white sugar
- 1/4 cup of mini chocolate chips (of course, you can adjust this measurement to your personal love of chocolate)
Preparation:
- Pre-heat oven to 325 degrees and lightly grease a 9×5 inch loaf pan.
- Combine and mix the mashed bananas with all ingredients, but leave the mini chips to be added last.
- Fold in the mini chocolate chips.
- Pour batter into the lightly greased pan.
- Bake for 1 hour.
- Let cool for 15 minutes. Slice, serve, and enjoy!
Extra Loafs
If you have kids or grandkids around when you make this, you may want to consider baking a backup loaf. That is, if you’re hoping to have any around to enjoy with a cup of coffee the next morning!
