Filipino Noodle Dish

While I never learned how to cook many of the ethnic dishes my mom made us growing up, Pancit noodles are a dish I did pay attention to over the last several visits she’s made. My kids have come to love my mom’s cooking, so trying to pick up some of her techniques and recipes she keeps stored in her head have become a must. Since we love anything pasta related, it’s no wonder the kids crave this delicious noodle dish.

Filipino Noodle Dish

Here’s What You’ll Need:

Ingredients:

  • 2 Tbsp garlic, minced
  • 2 Tbsp oil
  • 1/4 cup Maggie or soy sauce
  • 1/2 cup shrimp, beef, pork, or chicken, chopped or shredded
  • 1/4 cup carrots, sliced
  • 1/2 cup broccoli, small pieces
  • 4 strips of bacon, chopped
  • 1 cup bok choy
  • 1 bag of Philippine Style Noodles (see MIKI below)

Preparation:

  • heat your oil in a wok or large pan on medium and add garlic
  • add bacon and cook to desired crispiness
  • in a medium sauce pan, boil water and soak noodles for 3-4 minutes. remove and set aside
  • add carrots, broccoli, and shrimp (or meat) to wok and stir fry until cooked (roughly 4-5 minutes)
  • add in noodles and pour Maggie over entire area. Stir fry for another 3-4 minutes.
  • add in bok choy (whole or sliced) and cover with lid so steam will cook the bok choy. Do not over-steam. Remove lid when bok choy becomes limp
  • Add salt and pepper to taste, including more Maggie if desirred

Delicious Side Dishes

While I didn’t have time to make my own dumplings (coming soon though), I served a side of dumpling soup with our Pancit noodles. You can also serve dumplings with sauce instead of broth, as my son prefers. Pancit is also great with a side of shrimp fried rice.

Noodles

I love visiting the Hong Kong Market and browsing through all the varieties of noodles they offer. While I tend to stick with MIKI Philippine Noodles, you really can’t go wrong with any you choose. Glass noodles are another favorite choice and often broken up into short pieces for this dish. Experiment or choose the noodles that catch your eye. I promise, you won’t be disappointed with any of them!

Leftovers

I’m not sure what it is about Pancit leftovers, but we actually LOVE it reheated the next day. It also keeps well in a tupperware bowl when my daughter takes leftovers to school for lunch. I make extra just for the tasty leftovers and it is perfectly fine for a couple days in the fridge or frozen and defrosted later.

  2. This looks delicious! I like all Asian ethnic cooking. Ther is a large Vietnamese grocery a few towns from me that may have these noodles. I will look the next time I shop there.
